Bringing the Pacific Coast to Scotland
Cabo offers a fusion of Latin American and Mexican cuisines, inspired by the lively spirit of Mexico’s party peninsula.The 70-seater venue features dishes like ceviche sharing platters, hand-pressed soft shell tacos, and 60-day dry-aged Scotch steak. The restaurant’s design reflects this fusion, with interiors adorned with stunning artwork, cacti, and stone accents, creating an Instagrammable atmosphere that transports guests to the Pacific coast.

Our team at Vertice Projects meticulously executed every detail of the fit-out, from bespoke joinery to the installation of elegant fixtures.
